This is without-a-doubt your new go-to chocolate chip cookie recipe. Yes, there's an 'extra' step to Brown the butter BUT I promise its WORTH IT! They have a rich flavor (thanks to that browned butter) and are soft on the inside but chewy on the outside. BONUS, you can also use this as a "Base Dough" with 8 flavor ideas! Cookie Recipe Baking Tips
I have made thousands of cookies throughout the years, so I've picked up some important tips and tricks to ensure they turn out perfect every time. Here are some of my secrets.
Properly measure your flour: The number 1 reason why most cookie recipes fail, is theres TOO much flour. Too much and they will turn dry and not spread. Please measure with a kitchen scale. If you don't have one, then gently spoon the flour into your measuring cup and level it off with a flat edge. Don't let it pack down in there.
Know your butter - The type of butter you use can make a big difference. You would think that a really high-quality European style butter would make this recipe even better , and you might be right. But most cookie recipes are made with basic unsalted butter. If you try to use something thats a bit more rich, it can throw off the entire cookie. Different butters have different water to fat ratios. Too much fat, could cause them to be too soft, greasy or spread too much in the oven. When in doubt, stick to plain old unsalted butter.
Two sugars are better then One- Its with good reason there's 2 different types in this receipe , so try not to substitute. The molasses in brown sugar is what gives these cookies that soft but chewy texture and granulated sugar is what gives that golden and crips ring around the edge. Using both is what gives a well rounded cookie.
Larger the scoop, the better- Large cookies bake much better then smaller cookies. 2 oz seems to be the sweet spot. If you don't have a 2 oz cookie scoop, you can use 1/4 cup which also measures out to 2 oz.
DON't overbake - You always want to pull the cookies when the edges are golden brown But the center looks pale, puffed and slightly underdone. Cookies continue to bake outside of the oven. That residual heat transforms the center from goopy and doughy to soft and melty. Then, as they cool, they will deflate and flatten, giving you the PERFECT texture in the middle.
Don't skip the sea salt - A light sprinkling of sea salt on top of a warm cookie makes a world of difference. It helps balance out the sweetness but also brings forward that chocolate flavor. Just a tiny pinch gives a much stronger flavor. Once you try it, you'll never go without it!
Can I Freeze the Raw Dough?
YES! I never just make one batch. I always at minimum Double the recipe and freeze dough balls so I always have freshly baked cookie when I need. Keep in mind that Freezing does not replace "CHILL" time. So Chill the dough as per the recipe, THEN freeze your dough balls. When you're ready to bake, preheat the oven to 350 an bake for an additional 2-3 minutes then normal.
