The method of blending half of the bananas & sugar for 5 minutes into a light & fluffy cream BEFORE adding the remaining batter ingredients, then gently folding in the other bananas ( only SLIGHTLY mashed) produces a rich,buttery banana flavor that everyone will love. A thinly sliced banana at the top adds to the beauty.

Black Walnut Banana Bread (with sourdough discard)
Ingredients
2 Cups all-purpose flour
1 1/2 tsp baking soda
1/2 tsp salt
5 Overripe bananas ( 1 is for decoration on top)
1 Cup brown sugar
1/2 Cup unsalted butter ( melted & cooled)
1/4 Cup sourdough discart ( Straight from fridge is fine)
2 Large eggs
1 tsp Vanilla Extract
1/2 Cup finely chopped black walnuts ( Or whatever nuts you prefer)
Steps:
1.Preheat oven to 350 degrees.
2. Lightly grease a 9x5 loaf pan.
3. Combine the flour, baking soda and salt in a large bowl.
4. In a separate bowl, lightly mash 2 of the bananas with a fork.Make sure they still have texture.
5. In a separate bow, with an electric mixer, mix 2 bananas and sugar together for at least 5 minutes. You want it to be a light and fluffy cream.
6. Add the melted butter,eggs,and vanilla to the banana cream mixture. Beat well, and scrape down the sides of the bowl.
7. Fold in the dry ingredients until everything is mixed together. DON”T over blend! Now add your nuts and the other slightly mashed bananas with a rubber spatula.
8. Pour the batter into the greased loaf pan.
9. Tap the pan to remove any bubbles. With your remaining banana, thinly slice lengthwise so you get a few LONG , thing slices. Gently place on top of your batter.
10.Bake for about an hour and 15 minutes . Rotate regularly to make sure it. rowns on every side. Bake until golden brown and a toothpick inserted in the middle comes out clean.
11. Let it cool for at least 10 minutes before cutting.
Toast the bread clices and sprinkle with confectioners’ sugar if desired!
